What is Chutney? Why does it make a meal more interesting?
The word Chutney is derived from the verb Chaatna(to lick) in Hindi language. Chutney is something that you lick a little in between mouthfuls to make the tastier, interesting meal. Something that is good enough to lick and savor, not just swallow. A chutney can be similar to a relish, a dip. The variety of Indian chutneys is great. You can make your variations according to your taste, as you get familiar with the ingredients and the basics of chutney.

The chutney is a mixture of ingredients ground to powder or paste .
Each ingredient has its own special flavor and texture.This mixture and the treatment it gets in the preparation gives the special taste to the chutney. Some ingredients are used raw while some are roasted dry/with oil.
A chutney can either be in a powder form or a thick paste form. Powder chutneys last longer whereas semi liquid chutneys have shorter shelf life. But both are tasty. Powder form chutneys are made and used when you are in a hurry and do not have time to prepare a side dish or and an additional side dish.

Coconut chutney
A tasty chutney that is very popular and is served with a variety of dishes. It is very easy to make.
For Coconut chutney we need:
Grated coconut : 1 cup
Coriander leaves : 1/2 cup
Green chillies/red chillies : 2 nos. or as per taste.
Salt : to taste
Ginger : a small piece.
Garlic(optional) : 2 flecks.
asafoetida : a small pinch.
Water : 2-3 spoons
Method: Grind together all the ingredients. Add water if necessary (depending on how thick or thin you want). Serve with bread, pancake. Use as a spread for sandwiches with tomato/cucumber/cheese slices.

There is a variety of Mint chutneys.
We need:
Dessicated coconut soaked in warm water for 10 minutes or Fresh Coconut grated : 1 cup.
Fresh Mint leaves : 1/2 cup
Green chilli : 1 or to taste.
Coriander leaves : 1/2 cup.
Raw Ginger : small piece.
Lime juice : 1/2 teaspoon.
Salt to taste.
Preparation : mix all the ingredients and grind together. Add the lime juice and mix well. This chutney can be used as a sandwich spread, or as an accompaniment for bread or rice dishes.
Mint chutney - 2.
Ingredients:
Fresh Mint leaves: 1 cup.
Fresh coriander leaves : 1 cup
Fresh ginger : 1/2 inch piece.
Green chillies : 1 No. or to taste.
Tamarind pulp or lime juice : 1 teaspoon.
salt : to taste.
Preparation:
Grind together all the ingredients to form a smooth paste. Add water according to your desired consistency. Serve as a spread or accompaniment for snacks or a meal.

Green tomato chutney and Red tomatos chutney
We need:
Raw(green) tomatos :4Nos chopped.
Sesame seeds : 2 table spoons.
Sugar or Jaggery : 1 teaspoon.
Salt : 1/2 teaspoon or to taste.
Green chilli :1 or 2 Nos
Oil : 1 teaspoon.
Preparation : Roast the sesame seeds. Remove on a plate and let cool. Take a frying pan and add 1 teaspoon oil. Add chillies, tomato pieces. stir and cook for 5 minutes. Remove from fire and let cool. Mix cooked tomatos, sesame seeds and salt. Grind to a fine paste. This chutney will keep for 3-4 days.

- Hello Nayana,
your chutney proposals make appettite. It's a pity that some ingredients aren't available in Italy or better, not where I'm living. I like Mango-Chutney hot - delicious with chicken (sorry, won't offend you as a vegetarian - only to express my favourite).
